For chicken dishes

This entire book is about chicken dishes. So before I talk about how to cook the dishes, I will first explain how to cut chicken into standard dishes, how to name the parts of the chicken that have been cut up, how to make the necessary chicken broth when the dish is done, and how to prepare chicken broth in small packets or cubes if you need it.

Chicken color and appearance

Fresh chicken is a soft pink color. If you buy frozen meat from supermarkets, you will find that it is hard and chewy. If it is a corn-fed chicken, or a free-range chicken, it will be tender and chewy. (They call it Burmese chicken in the market.) It will have a special aroma when cooked. Farm-raised chicken with tender meat is called barbecued chicken.

How to name the parts of a chicken

When you buy ready-made chicken at the supermarket (as shown in the picture) , you will see that it is divided into two parts: drumstick and breast. The breast is usually cut in half and sold separately.

The tenderloin is the part of the chicken breast that is located on the back. It is also removed separately.

If you want the chicken breast to be flat and crispy before cooking, you can lightly pound it with a small wooden mallet.

Some people boil a whole chicken to make chicken broth. Add 2 cloves of garlic, 2 carrots, a bunch of celery, a bouquet garni , 3 liters of water (3 large water bottles), and place the pot on the stove over low heat.

Let it simmer for about 3 hours and slowly bring to a boil. Remove any fat that has risen to the top of the pot with a spoon. Sometimes it will foam. Remove all of it. After 3 hours, strain the chicken broth through a sieve to make sure it is clear. There is another method of boiling 1 pound of chicken with 1 large onion, 1 leek, 1 carrot, 1 bunch of lettuce, 2 bay leaves, 4-5-6 black peppercorns, 1 thyme sprig and 3 liters of water for 3 hours. If the fat has risen or foam has risen, remove it in the same way. Then strain the broth and the liquid from the pot through a sieve.

You can add it to sandwiches and eat it sliced. Let the carefully strained broth cool and keep it in the refrigerator (fruit storage) overnight. The next day, the fat layer will be gone.

If it is small, remove it and put the chicken broth in small plastic bags and put it in the freezer. Some people also put the chicken broth in ice cubes and freeze the broth. Just heat the chicken broth (in the required amount or in the package) and use it when you are ready to use it in cooking.

Chicken with Brazil Nut Butter

Ingredients

- 4 parts

- 5 kyats

Chicken breast, Brazil Nuts (Macadamia nuts) (roasted - ready to eat), red chili, seeds removed, thinly sliced

Butter Basil (thinly sliced) Tablespoon Lemon juice (freshly squeezed) (teaspoon) Olive oil (teaspoon) Salt/sesame oil/lemon juice mixture

- 1 capsule - 6 kyats - 2 tablespoons - 1 tablespoon

- 2 tablespoons - a little

How to prepare and cook

  • Grind the Brazil nuts (macadamia nuts), red chilies and butter in a coffee grinder until smooth. Once everything is mixed, pour into a bowl. Stir in the chopped basil, cover the bowl and refrigerate. Cut the chicken into bite-sized pieces with a sharp knife and place on a plate.

Add in. Mix 1 tablespoon of oil and lemon juice and stir until combined.

• Place the chicken in a frying pan (non-stick frying pan is also available) and fry until golden brown.

Heat the oil and lemon juice in a frying pan and coat the chicken with it, making sure to coat the meat well. Grill the chicken for 4-5 minutes. After grilling the chicken, remove it from the pan and use a sharp knife to cut it into thin slices. If you are going to serve the chicken salad, place a plate with some lettuce leaves and add the chicken pieces one by one. Finally, pour the sesame oil, salt and lemon juice mixture over the chicken. Then the chicken salad is ready. Some people also sprinkle a little celery leaves on top.
