Peter Waitman and his wife Laura founded Great Harvest Bakery 25 years ago. As entrepreneurs, they have dedicated much of their lives to their work. But there was one long-term commitment they made when they started their business: they would not work on holidays and would take a vacation once a year.

“I have a clear separation between tasks. I have time cards that I keep separate. I have five minutes to do something. When I’m working, I know what I’m doing. I always have a spreadsheet on my computer of when and what I’m going to work, and what I’m going to do. And I make very specific decisions about my time management. In 1996, I decided to work a thousand hours. One half each. During those thousand hours, we adjust our schedules as we see fit.”
